Deeply hidden in the historic streets of Madrid, just a stone's throw from the bustling Plaza Mayor, lies a culinary legend that has kept its doors continuously open for three centuries. Restaurante Sobrino de Botín is officially listed in the Guinness Book of Records as the oldest continuously operating restaurant in the world.

The adventure began in 1725, when the French chef Jean Botín and his wife moved to Madrid. Because they had no children of their own, a nephew later took over the business, leading to the current name Sobrino de Botín (which roughly translates to 'Botín's nephew'). The unique building housing the establishment even dates back to 1590.

What makes this restaurant so extraordinary is that its iconic wood-fired oven has been burning continuously since its founding in 1725. To this day, traditional dishes are prepared here according to centuries-old recipes. The absolute specialty of the house is cochinillo asado (traditionally roasted suckling pig) and tender cordero lechal (suckling lamb), crispy on the outside and unprecedentedly juicy on the inside.

Over the centuries, Botín has welcomed countless icons. For instance, the young Spanish painter Francisco de Goya is said to have worked there in his early years, and the legendary American writer Ernest Hemingway was a loyal fan. Hemingway even immortalized the restaurant in the closing pages of his famous novel The Sun Also Rises.

Today, the restaurant is run by the González family, who flawlessly preserve its soul and authenticity. A visit to Sobrino de Botín feels not just like going out for dinner, but like stepping back into Spanish history where every bite tastes of tradition.
